David Arauz: Michelin-Starred Maestro of Japanese Culinary Excellence!

David Arauz’s career is marked by a rich journey through top Japanese gastronomy establishments in the country, contributing to renowned projects like Suntory, Yashima, Kabuki, Kazan, and his own venture, 99 KŌ Sushi Bar by David Arauz.

His accolades include the coveted Michelin star in the 2020 edition. In 2022, Arauz and Álvaro Prieto opened Zuara Sushi in Madrid, securing a Michelin star and a Repsol Sol in under a year. Zuara Sushi is now revered as a Japanese culinary temple in the capital, embracing the “omakase” bar concept.

Álvaro Prieto, an esteemed sommelier and dining director, brings extensive knowledge from experiences in establishments like Ametsa by Arzak in London, MB Abama (Martin Berasategui), and Club Allard in Madrid. His outstanding liquid offerings make SHIBUI a must-visit for wine enthusiasts.

Completing the SHIBUI team is head chef Gerardo Cruz, with vast experience in Madrid’s top Japanese kitchens and over five years collaborating with Arauz-led teams. In the dining room, José López “Pimpon,” a highly regarded professional in island gastronomy, ensures impeccable and professional service.
